I shared our meal plan with you yesterday - and promised a recipe for White Chili today. Here it is... This is easy to make and quite scrumptious, if I can say so myself!
What You Need {Serves 2-4}:
1 T extra virgin olive oil
1 large chicken breast, cubed
1/4 onion, chopped
1-1/4 cup chicken broth
1 can green chiles, 4 ounces
1 t garlic powder
1 t cumin
1/2 t oregano
1/2 t cilantro
1/8 t cayenne pepper
salt and pepper, to taste
great northern beans*
green onions, chopped {optional}
shredded monterey jack cheese {optional}
Heat oil in a large saucepan over medium high heat. Cook chicken and onion in oil 4-5 minutes or until onion is tender. Stir in chicken broth, green chiles, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat and simmer fifteen minutes. Stir in beans and simmer five more minutes or until chicken is no longer pink. Garnish with green onion and cheese.
*I cook my own dry beans and use about two cups cooked beans, you could use 1-2 cans if you'd prefer.
